Some of the cars are pretty stock (looking). Like all have said, it's the owner's choice. Many are far from stock under the hood. Some, like Pat's, are absolutely flawless - I'd say that's original. Mine has 350Z seats and a roll bar - could be argued as original. I could go on-and-on, but you (should) get the point.
